Hello, in my past I’ve tried a few Swedish recipes mainly inspired by the Regular Ordinary Swedish Meal Time and they were all fantastic so I was wondering what next would you guys recommend to me to try?

So far I’ve had the meat balls with mashed potatoes, stuffed cabbage rolls and the Fallukorv sausage meal.

I love your culture and country, been there once and loved it, turns out I like your food too 👍

    I recommend what’s called “husmanskost” and the regional specialties, the basic dishes for the working person.

    In no particular order:

    • Kroppkakor

    • Fläskpannkaka with rårörda lingon (lingonsylt works too)

    • Pitepalt

    • Köttbullar with potatismos and brunsås and lingonsylt (or rårörda lingon)

    • Raggmunk with bacon and rårörda lingon (lingonsylt works too)

    • Smörgåstårta

    • Ärtsoppa with fläsk

    • Gravad lax with nypotatis and löjrom

    • Korv Stroganoff

    • Pyttipanna with inlagda rödbetor and fried ägg

    • Stuvade makaroner with stekt falukorv

    As for dessert…

    • Princesstårta

    • Chokladbollar

    • Kanelsnäckor

    … A good source for easy but usually good recipes is ICA, ica.se/recept. Afaik only in Swedish but should be simple to google translate.

    There is only ONE way to make stuvade makaroner. You simmer the macaroni in milk. Make sure to continuously stir the bottom. You can either use a Teflon pot or a sautesue. Cover the pasta with milk and gently simmer them, when u get a slight boil and the milk is reducing be sure to add more milk. The starch in the pasta thickens the sauce. Add black pepper, salt and freshly grated nutmeg.

      Interesting, is that a full meal or more like a snack/breakfast type of thing?

      Also, beetroot salad? I’ve never heard of that. Is that similar to what ROSMT guys have done with jarred beetroot and added crème fraiche and mixed it?

        I had totally forgot about rosmt. I used to watch them alot. Fun times :)

        Its like a perfect lunch sandwish. You will get full.

        Yeah but I think beetroot salad that we buy in the store usually is chopped beetroot in mayo with some spices. Delicious, its also eaten during christmas.

    This is mushroom picking season. You MUST try something with chanterelles. This is the mushroom most sacred to Swedes.

      Interesting, it looks like a ”common wild mushroom“ based on the shape, size and color. That’s at least if I compare it to what I can find here in our supermarkets.

      I’m not a huge fond of mushrooms but every now and then I like to have something that’s got fairly neutral flavored mushrooms in it. I’ll definitely give it a try. Do you have any tips what is a good dish including these?

      Also would you care to explain why is this mushroom saved in Sweden? That’s very interesting

        It doesn’t have an earthy musky taste, like some mushrooms. It’s very unique. And Swedes call it the gold of the forest and your chanterelle spot is a family secret. It’s probably sacred because of the unique flavour. You either just fry them in butter and put it on toast or serve them as a side. Then you can make stew and also just put it on toast. Then ofc as a sauce. I myself make a pasta with chanterelle sauce. Homemade meatballs with mashed potatoes, chanterelle sauce and sugarpickled lingonberries us to die for.🤤 sometimes you can find dishes with chanterelles on “Dagens lunch”. But then they are very stingy with the chanterelles. But maybe that’s good for you.😅

        Chantarells, Butter fried chantarells on a slice of bread. Many people loves this.

        Im not sure this is swedish pre-se.

        tarragon infused Cream sauce and fried up pork meat, owen roasted potatoes its a good option… (Bigger potatoes into 8’s) some oil, spices you like such as garlic powder, salt, black pepper, dill, or what ever fancy you, potatoes in the owen for 25-40 minutes to be done. Fry up the meat and heat up whipping cream, toss in the spices you like and alot of tarragon into the cream after frying up the meat, put them in the infused cream and let it simmer for 10-16 minutes. more or less.

        I’m really not a fan of mushrooms. But picking chantarelles in the forest, then simply fry it in butter, put it on a toasted piece of bread and sprinkle some sea salt on top.

        Different mushrooms do have different flavours and consistencies. Chanterelles have a very specific flavour, and the flesh is pretty firm. They are very popular, often used in cream sauces, fried on bread, served with game meat and so on. A place near me even serves it on pizza.

      This is something I never understood from ROSMT’s videos, they cooked pasta in milk and I thought that’s a joke but it seems that it’s an actual thing😳

        It’s called stuvade makaroner, the Milk and the startch from the pasta makes it very thick and creamy.

        I like mine with ALOT of salt and pepper. My GF likes it with sugar. You typically combine this with meatballs or falukorv and ketchup

          Now that you’ve explained the chemistry it actually makes a whole lot of sense and I want to try it so much now haha.

          I assume combined with sugar you could come up with some interesting sweet pasta recipes maybe?

            I think the sugar makes it more creamy or something, and ofcourse more sweet. I peraonally dont like sweet foods. I can send you a picture of the recipie we have on our macaroni box

            You normally don’t boil the pasta in the “milk sauce”, just mixed it together.

              There are 2 ways. You either boil the pasta in milk, nothing else added.

              Or, you make a plain bechamel from flour and milk and mix it with normal water-boiled pasta.

              The thing with Stuvade Makaroner is that it enhance what you add as flavour. For example Ketchup is pretty boring with just pasta, but with Stuvade Makaroner it just tastes so much better.

    Well here is desserts, you need to try to them too!

    Chokladbollar / chocolate balls. This is something any kid can do in Sweden:

    150 gram butter

    150 ml sugar

    3 tablespoon cocoa powder

    400ml rolled oats

    1 teaspoon vanilla

    2 tablespoon strong cold coffee or if you want to go adult rum or whisky.

    Decorations: Sprinkles or desiccated coconut or Swedish pearl sugar.

    In a bowl add butter , sugar and cocoa and mix until combine, use your hands and add oats, vanilla, coffee. Roll 15 balls and roll them in the decorations of your choice and leave on plate to rest for 10 min.

    Enjoy!

    Kladdkaka ( sticky cake, also known as Swedish brownie)

    100 gram butter

    200 ml sugar

    4 tablespoon cocoapowder

    150 ml flour

    2 eggs

    1 tablespoon vanilla

    a pinch salt.

    Heat the oven to 175 C

    Melt butter and add cocoa , stir to smooth paste. whisk sugar and egg pale, add flour, vanilla and salt. Stir in the cocoa butter. Use a 9inch cake tin, cover with baking paper. Add the batter and bake for 25- 28 min. It should wobble in the middle. Leave to cool down and for the best cake, leave in the fridge for 8 hours. Serve with ice cream or whipped cream.

      Brown sugar is way better than white for chokladbollar. Never seen someone make them with white, well except kids of course.

        I never seen anyone make it with farin ( brownsugar), the recipes online and in cookbooks uses white sugar.

          Well try it! The flavor is 10x better in my opinion, much more rich and combines better with the coffee flavor, instead of with white where it just tastes more plain and sweet.

          I was always pretty decent with cooking but when it comes to baking I’m quite falling behind so I’m definitely up to learn something new.

          Also whatever I do I almost exclusively prefer to do most things from scratch like sauces, sides, etc. I don’t like jarred things so yeah again, definitely keen to try it

    My fav swedish dish is wallenbergare, it’s a very nostalgic dish from celebrations, isn’t terribly hard to make, and has so much taste, creamy mouth feel also.

    I’m tired af, but if you find it an interesting dish and want to make it I’ll find a recipe for it later.

      Looks good! I had a quick glance at a few recipes and it’s basically a giant veal meatball with the classic onion/bread crumb, egg, cream cheese and ground beef/veal mixture with sauce and potatoes correct?

      I already roughly know how to whip up the meat ball mixture so all I have to do is figure out how to make the sauce which don’t look overly difficult either.

      Also after all of you nice people have replied here I spotted a common denominator for most of these recipes and that’s just simple peeled boiled potatoes, I’m not used to those at all, whenever I cooked potatoes I always used at least butter, parsley, salt and pepper to elevate the profile but it seems that Swedish cuisine relies on the fact that these potatoes are mostly bland flavor which is elevated when eaten together with the rest of the dish which makes it very interesting because it’s so simple.

      Also when I made that stuffed cabbage rolls the meat mixture included what was translated as porridge and in the video it came in a plastic foil of cylindrical shape and it was white an creamy, they put this in the meat mixture and I wasn’t sure what it is, could you explain please?

      Looks great! Would I violate the code if I substitute the veal for regular beef, like chuck or something similar?
