I know this is a bit narrow minded, but at least we got some amazing culinary creations born from mixing French with Vietnamese cuisine.
Bánh mì rolls for example - The creation of the bánh mì can be attributed directly to French colonization. The French introduced the baguette to Vietnam, which locals adapted into a shorter, airier bread roll with a crackly crust.
If you have never had one you are really missing out.
