I basically use my computer for nothing gpu intensive and have it in a standard atx case.
I have an i7-8700 and am wondering how small I can get it.
I see those nuc computers and wonder if it could be transformed into a system like that.
Or is micro-atx the smallest I can go?
Mini-ITX (or just ITX, for short) is smaller than Micro- ATX.
ETA: NUC’s aren’t generally upgradeable, other than storage and memory. I’m not aware of any boards in that form factor that would allow you to drop in your own processor.
ETA 2: There’s lots of ITX cases, from ones that can fit full size, 330mm GPUs to ones that can only fit the motherboard, low-profile CPU cooler, and an SFX PSU.

If I could make a recommendation, the NR200 Max is a great first case for SFF. I think it’s about 17L, so on the larger end of SFF, but it can fit full size GPUs and a number of different CPU coolers.
SFF Time is a unique option that makes a couple cases that can fit ATX parts.

I’m actually thinking about getting rid of the gpu.
It’s about as powerful as my steam deck and I only use the computer for office work and web browsing.
I’m really trying to make it as small as possible.
There’s some neat options for tiny, APU-only cases, and since you’ll be potentially missing the GPU, it will likely be very portable. And if you decide to throw in a GPU, there’s some smaller sandwich cases that can fit single-fan 3060’s (for example) or single slot “office grade” GPUs.
