Trying to replicate my local sushi places dishes so I can make them at home but don’t know what salad greens they are using
I think one of them is a type of lettuce but indent know which type

Looks like loose leaf lettuce on the bottom (the bright green, curly edge leaves), and there are cut strips of dried kelp or seaweed on top (the rectangular shiny bits) along with sliced green onion (the round ones).
I could be wrong but my guess is the bottom layer is green leaf lettuce, and the more jagged one looks like arugula.
I agree with escarole, it has a slightly brother green and leaf texture.
The op must establish if the leafs were slightly bitter or more neutral flavored.
I don’t see any arugula in the photo, it has a really distinct leaf outline and I’m not seeing it

The stuff on top is called nori (dried seaweed) and they’ve cut it into strips, along with some green onion and sesame seeds.
I see arugula, lettuce (romaine?), green onion slices, and nori (dried seaweed strips; often found in Asian grocery stores in my region). The dried nori is likely from a spice jar because it also looks to contain sesame seeds. I buy some of this to put on rice and eggs sometimes, attaching picture below. Not sure about that yellow, but maybe squash?
On the bottom looks like a mix of lettuce and arugula, wouldn’t be surprised if they’re using a prepackaged spring mix or similar
On top is the furikake you already know, and green onions/scallions
