Tossed them in some soy sauce, sweet thai chili sauce, peanut butter, oil and a few seasonings before roasting at 500F until browned, before dropping the heat a bit until done, topping it with some crushed sriracha infused peanuts (over some sriracha sauce)

    • Thank you like they don’t even look as good as they tasted but i was very happy with how it turned out. I hate saying i miss being at work but i miss feeding people stuff like this. It’s harder to experiment at home when i need to clean everything lol

    • If it helps i think i basically made a satay sauce but with sweet thai chili in it instead of lime juice. You’d maybe get a better result (or could get away with a lower cooking temp) roasting them a bit before adding the wet parts of the sauce, but idk this turned out perfect

      My partner wanted midnight brussel sprouts and i asked if they wanted them standard or for me to get weird with it and they said weird. I didn’t follow a recipe but I’m pretty sure it’s like a satay sauce without lime. A big fistful of peanut butter, a couple tablespoons of soy sauce and a big drizzle of sweet thai chili sauce plus some salt, pepper, garlic and onion powder. You gotta cook it really hot to caramelize because it’s so wet but the sugar content makes it prone to burn so watch it

      It’s what I seasoned this tofu with, but i haven’t cooked it yet, I’m letting it really get to know that flavor

      I didn’t know the sriracha peanuts existed until i saw them at a dollar general. Theyre pretty good though

        That sounds really good. I want to get good enough at cooking that I can just “get weird” with food and make it turn out delicious. And I might go looking for those peanuts now.

        • The best advice i can give is learn how to drive maillard reactions for good savory flavor in everything you want that in (primary key things being you need high heat and dry conditions as moisture restricts things to around 212F/100C until it boils off) and don’t be afraid to do something weird as long as you’re learning, yknow? You’ll fuck up a bunch of stuff if you’re trying to get TOO weird but the more you cook the more you’ll learn what kinda flavors to expect to go together or how to deal with bitter flavors and stuff.

          Also did you know cinnamon and garlic taste great together, just as like, the main seasonings? I thought it’d be weird but that’s how you season lebanese braised green beans (loubieh bi zeit) and it fuckin slaps. Cinnamon garlic is good for brussel sprouts too, honestly!

    • Sweet thai chili sauce isn’t hot at all. I wouldn’t even register it on the white people spicy meter. It’s mostly sugar and fun fact but SHUs were initially measured as “how much sugar does it take for you to not notice the capsaicin”

      It did get a little spicy though but it was fine

        • Sort of on the heat but it’s like really sweet. And with garlic flavors, so more like a sweetened cholula/tapatia/sriracha (where the sweetness totally covers the heat), but different pepper flavor?

          Here’s the label for the panda express version (iirc i just grabbed the cheapest i saw at the store)

          It’s very viscous and the garlic smell is very prominent

            • It’s very good for being mostly sugar. It’s great for ground beef, just cook it with some onions, garlic ginger and basil then toss some of this in until it’s absorbed, ez thai beef. You can do the exact same thing with Beyond beef crumbles if you’re vegan
